P.G.I. STAFIDA KRITIS (CRETAN RAISIN)

“Stafida Kritis” is exclusively derived from “Soultanina” grape varieties grown in the island of Crete. Harvest takes place from mid-August to mid-September. The main characteristics of this product are its yellow to brown colour, its sweet flavour as well as its soft yet dense consistency.


Raisin processing is an interesting technique. During this process, grapes are soaked into a traditional blend consisting of ashes boiled in water (“alousa”). They are, then, dried under the sun, as tradition dictates. Raisins can also be sun-dried without prior soaking into the alkaline solution mentioned above.
